Shrimp Salad Recipe Biography

Ingredients 
1 - 15 ounce can black beans
1 red pepper, diced
1/2 cup jicama, diced
3/4 cup extra sweet frozen corn, defrosted
1 ripe mango, diced
1 pound raw large shrimp, peeled and deveined
1 Tablespoon jerk seasoning
1 Tablespoon olive oil for sauté

2 bags baby spinach
1 avocado, sliced
Directions
Dressing Ingredients:

2/3 cup fresh squeezed lime juice
2 Tablespoons extra virgin olive oil
2 Tablespoons chopped cilantro
1 clove garlic, minced
1 teaspoon Dijon mustard
1 1/2 teaspoon honey
1/2 teaspoon minced fresh ginger
1/4 jalapeno, seeded and minced
1.Whisk together all the dressing ingredients in a large bowl. Remove 1/2 the dressing and reserve for dressing the spinach.
2.Rinse and drain the black beans. Shake off excess water and add to the dressing.

3.Place the red peppers, jicama, corn and mango into the dressing and stir to coat with dressing.

4.Toss the shrimp in the jerk seasoning to coat.

5.Heat a large non-stick sauté pan over high heat, sauté shrimp in olive oil until cooked through, approximately 3 to 4 minutes.

6.Toss the spinach with the reserved dressing. Divide between 4 dinner plates. Top with marinated vegetables, sautéed shrimp and avocado slices.
