An easy, healthy and filling snack recipe
for kids and adults both. Pasta Salad recipe
is what I turn to when in need of a quick bite.
Try out this tested recipe of mine and do tell
me how you like it. Any twists and turns are
welcome too. After all, healthy cooking begins
with healthy discussions!
Ingredients for Pasta Salad Recipe
125 gms pasta (whole wheat pasta is better for
healthy cooking, though all purpose flour
pasta is also good for the recipe)
1 or 2 cloves of garlic
1 medium size tomato, chopped
1 small cucumber, chopped
¼ cup finely chopped onion (optional; if you
making pasta)
1 tbsp extra virgin olive oil
Herbs: ½ tsp herbes de provence, 1 tsp dry
basil or ¼ cup chopped basil, ½ tsp dry
oregano, ½ or 1 tbsp chives
9-10 pitted black olives, sliced
½ tsp balsamic vinegar (optional)
salt and pepper as required
Method:
1. Heat some water (enough quantity to soak
the pasta) with salt added to it.
2. To boiling water, add the pasta along with
the garlic cloves
3. cook till the pasta is done (soft) and drain.
4. It’s important that after draining, the
pasta should not stick to each other. So
add some oil to it and stir gently.
5. In a large shallow salad bowl, add all the
veggies and herbs.
6. Now also add the pasta and toss.
7. For flavour, take the cooked garlic clove
(the one that you boiled along with pasta)
and mash it in a mortar & pestle (if you
dont have a mortar & peste, the back of a
spoon would be fine too).
8. To this add the olive oil, vinegar, salt &
pepper. Stir the seasoning and add it to the
pasta.
9. Toss thoroughly and serve. Prepare yourself
for compliments on your delicious, crunchy
and healthy pasta salad recipe!
